| We are especially proud to introduce you to our Head Chef
Yves Gautier. He has had an impressive career working in some of the best
hotels and star restaurants you can imagine. He was even the Head Chef to
His Majesty King Hussein I of Jordan for two years, before he met, fell in
love with and married a young Madeira girl called Lucia and came to live on
the island. He has an awesome ability and knowledge of fine tasting cuisine
and poured all of his international experience into combing the best of
French “cuisine classique” with the best of his much loved Portuguese
culinary fare. You can experience the delights of his creations every day in
our hotels and restaurants. |
| There is something for everyone in our bars and restaurants,
whether you are a lover of the exotic and exciting, appreciate typical
Madeira cooking, fish specialities, or light menus. The list is endless and
we are sure that you will not be disappointed. |
| Deliveries of food arrive daily from our many suppliers on
the island. As far as we’re concerned, only the best is good enough for our

Take the opportunity to dine around and choose the
restaurant where you would like to dine in the evening. Generally speaking,
the restaurant in Ondamar is available to our guests with half board where
there are different menus on a different theme each evening. You can dine
under the palm trees and choose between either hot or cold dishes from an
array of fish, meat and vegetarian delights. There is also a huge variety of
different salads and fruit to chose from, but the hotel restaurant is
particularly well know for its unforgettably tasty soups. The crowning glory
of every evening meal however is the huge variety of desserts with an
exquisite choice of cakes and ice creams.

enjoy the culinary arts of our French Head Chef, then you can exchange a

Atlantic. Then why don’t you try out our fish restaurant “Atlantis”. You
will be spoilt for choice between fresh tuna fish, black swordfish,

You can travel the world of fine cuisine with Vasco de Gama
and enjoy Madeira as well as Portuguese specialities. You can experience the
influence that the Moors had on Portuguese cooking and discover the exotic
tastes of Asia and Arabia. What about a sprinkling of Brazil here and there
or live the life of Riley with this array of culinary delights. It also goes
without saying that we offer vegetarian treats to tempt your palate and
there are also specially prepared “light” dishes that would of course be
expected in a first class wellness and sport hotel such as ours. Dine on our
pool terrace as the wind rustles gently through the palm trees on balmy
evenings.

| Our creative chef Yves Gautier is a master of the culinary
arts, and when he uses his international savoir faire to bring together
traditional Portuguese and international cuisine, it’s a unique culinary
experience that you cannot afford to miss. We hardly need to ask why our
more traditional restaurant O’Galo is recommended in most travel guides. It
is here that virtuoso Madeira chefs bring together traditional dishes with
ingenious combinations of French, Italian and Spanish side-dishes. |
| What about a cold strawberry soup with a dash
of Pernod, or a fish soup with a sprinkling of cinnamon? We can also offer
pork fillet seasoned with chorizo and sweet potatoes followed by home-baked
apple tart and home-made Madeira ice-cream. Our Ice-Cream Tropical is a
dessert made out of baked banana sticks with chocolate, or what about a
pineapple-ginger sorbet? These desserts are simply a perfect dream. |

We also have an exquisite choice of wines with selected Portuguese, French
or Italian wines to choose from to compliment a perfect meal. |

| Fresh fish straight
out of the Atlantic |
| You can’t beat the freshness of our fish which
come straight out of the Atlantic and onto the grill. You will find our fish
restaurant in the bay which can be reached by lift. You can also find any
number of fresh snacks, salads and fish dishes which are served during the
day as an energy boost for energetic swimmers. |
| In the evenings, we turn our attention to the
diners on the terrace who come to enjoy our fish specialities while watching
the sun set over the Atlantic. You can choose between grilled parrot fish,
Rose fish, or bream which you can have either whole or filleted. Treat
yourself to our fresh mussels, Octopus or Cataplana straight out of the
copper pan. |

| Lapas – a
speciality of Madeira |

| These mussels are a very special variety that
only survive in clean, clear waters and thereby develop the unique taste
which they are famous for. These are a particular speciality of Madeira and
you really mustn’t miss the opportunity to try them out. |
| The mussels should preferably be cooked on an
open grill in a specially designed grill pan. The taste best unfolds when
sprinkled with fresh lemon juice and you eat them by sliding them directly
from the shell into your mouth as you would with oysters. |

| Madeira and Italy - a long
established friendship. |
Nelio was born and bred on Madeira, but when you eat one of
his pizzas, you will swear that he’s Italian. The Trattoria – Pizzeria is
extremely popular amongst the locals who call in regularly using it as a
meeting place. If you order pizza in the Italian style then you will get the
traditional thin based pizza of Italy. Portuguese style however, means a
thicker base with much more on the top. It hardly needs to be said that the
locals go for the Portuguese style.
Pepper mills are placed on the tables so that you can flavour your pizza
with a sprinkling of freshly ground pepper. This is one of the small touches
that we believe improve the flavour as the aroma that is lost during the
process of cooking can unfold. |

| This isn’t
only for the little ones |
We have a real live pancake oven in our
pancake restaurant which is open during the day to tempt you. Spicy, sweet,
or exotically fruity, you can combine, or experiment and choose from 50
different pancake recipes to suit your own individual taste. Make your
choice perfect by adding one or two scoops of a huge variety of different
flavoured ice-cream which we have ready here for you. You can order a
portion to still your hunger during the day or have a sweet pancake with
coffee in the afternoon instead of cake. Whichever way you look at it, our
pancake specialities are a real hit with young and old alike.

Bar Ondamar |
| Today it’s folk
music, tomorrow soul and the day after Samba. |
| This bar is closed during the summer when everything happens
in the open-air at the Vista-Azul Bar. Ondamar however is the place where
everyone meets in the evenings. Sometimes it is quiet with gentle guitar
music playing in the background but on another night, you might hear a band
from Brazil playing the hot sounds of rumba and samba rhythms. The next
evening could be traditional folklore with music of Madeira. Whatever music
is featured, you certainly won’t be bored. If you’re tired from too much
dancing or walking perhaps, then just relax in a cosy corner and enjoy
watching those energetic ones dancing the night away. |

Our Ondamar Bar has a wide selection of international
cocktails to offer, but there is also a large selection of local
specialities. You can try out our famous national drink of Madeira which is
called the “Poncha”.

| Bar Vista Azul |

| Hot rhythms on balmy nights |
As long as the weather permits, we like to stay outside in
the open air. During the daytime however, Vista Azul Bar is a quiet coffee
bar where you can read the newspaper or have a quiet coffee whilst trying to
spot whales or dolphins from the fantastic viewpoint perched on the top of
the cliffs.
In the evening you wouldn’t recognise it again as our animation programme
and live music take over. There is a new and exciting programme every
evening with guest appearances from visiting artists. In 2005 for example we
had live performances from Gary Slade and Holler and Mario Berger. |
The most popular cocktail enjoyed by our female guests is
Pina Colade (you can see it on the right)

| Cool drinks, hot coffee- whatever your
heart desires. What about a cocktail, a Madeira Poncha or freshly drawn,
cool beer. You can even have some fresh pineapple brought to personally
while relaxing on your sun bed. If you only want a bite to eat, then why not
try one of our selections of salads or snacks. Why not spoil yourself with a
hot cup of coffee and a piece of one of our freshly home made cakes. |
